If you have ever heard of knödels, you might think this soup, in which rich, ball-shaped flavor-bombs float, has nothing to do with Italy…well you are wrong!
Canederli, knödels, is a traditional dish from Trentino Alto Adige, and its origins, maybe slightly romanticized, are to be found in a little story. It is in fact said that in the 15th century, fierce mercenary soldiers entered a South Tyrolean inn, ordering the innkeeper to feed them immediately, taking his wife and daughters hostage.
All they had at their disposal was bacon, eggs, stale bread, milk and flour, so they just made some dough balls and boiled them in water, saving their lives.
This dish might not be life-saving these days, but it is absolutely irresistible!
