The Bolgheri Sassicaia of Tenuta San Guido was born in vineyards located in the beautiful landscape of the Tuscan Maremma. It is mainly produced with Cabernet Sauvignon and Cabernet Franc grapes, harvested between the beginning of September and the first week of October. The vinification process, at a controlled temperature of 30-31°C, consists of 2 weeks of maceration on the skins, followed by malolactic fermentation in steel tanks. The wine then matures in French oak barriques for 24 months and then ages in glass before being released on the market. It is characterized by an intense and deep ruby red color. The bouquet is persuasive and elegant and opens with rich and ripe hints of red fruits, blueberry, currant and cassis, enriched with fine notes of Mediterranean scrub, juniper, laurel and myrtle, which evolve into spicy aromas and balsamic notes. It is strong and concentrated on the palate, with a rich spiciness and sensations of chocolate, vanilla, cinchona and fern, balanced by a vegetal touch that gives freshness. Overall it is a wine of great elegance, with fine and soft tannins. Perfect to accompany game and game dishes, especially wild boar, it is perfect with large roasts.
