The Amarone Capitel Monte Olmi can be synthesized in genius and composure, for its personality and great character, which is accompanied by so much elegance.
It is the great cru of the family since 1964, today the flagship of the company and reference point of the territory.
The vineyard is one of the historical family vineyards, purchased in 1918. The grapes are dried for 4 months in a ventilated environment with humidity and temperature control. The fermentation is slow with a long maceration at low temperatures.
The wine matures in Slavonian oak barrels for 4 years and completes the refinement for another 12 months in bottle. A wine with a delicate fruit, which is enhanced with aging, and with strong balsamic notes, of great structure and complexity, very elegant, long lasting.
To be paired with roast red meat and game, braised meat, long aged cheeses.
