A Valpolicella selection of extraordinary elegance and pleasantness. The Valpolicella Classica is a wine typical of Valpantena, and expresses fine notes of cherry, fresh fruit, white pepper and silky tannins.
Traditional vinification is used with this vintage. This process includes destemming and soft crushing of the grapes, fermentation at controlled temperature in stainless steel tanks and truncated cone vats. The vinification process continues with pre-fermentation maceration executed within a controlled temperature environment.
Winemakers continue with a daily delestage pumping, followed by the malolactic fermentation in steel process until the wine is complete. Bâtonnage is carried out on the wine's own yeasts in steel tanks.
