ViaVenti Extra Brut is produced with Glera grapes (85%) and a small part of Chardonnay (15%), coming from the vineyard in Gorgo al Monticano, which spreads over about 5 hectares (12.5 acres) in a flat, medium-textured and clayey area between 20 and 50 meters (65 and 122 feet) of altitude.
The vines enjoy a perfect exposure, as well as modulated temperature ranges and a ventilated climate which allows the grapes to ripen perfectly. In the cellar, the base wines undergo alcoholic fermentation and refermentation for one month in autoclave, according to the Charmat-Martinotti method.
After at least one month in bottle, it is ready for the market.
The result is a bubbly wine characterized by extreme drinkability and salty length.
