Which wine to match Chicken "alla cacciatora"?

The ideal Italian wine to pair with tasty white chicken meat is a medium complex and structured red wine, which maintains the right amount of freshness to balance the succulence of the dish. Chianti and Chianti Classico vintage wines are perfect! Alternatively, high-altitude red wines, such as those from volcanic soils like Mount Etna, where the savouriness and elegant freshness perfectly accompany this dish, are all worth exploring. For those who prefer to 'drink pink', we recommend a full-bodied and fragrant rosé such as Cerasuolo, a fascinating encounter between white and red.

  • Canned tomato 300 grams
  • White wine 1 cup
  • Extra-virgin olive oil as needed
  • Salt as needed
  • Carrot 1
  • Celery (Stalk) 1
  • Yellow Onion 1
  • Fresh mixed herbs as needed

Prepare the chicken

Quarter the chicken into 8 separate pieces. Heat large frying pan, and coat with olive oil, or heat nonstick frying pan. When heated, add chicken and allow to brown in pan. Remove from heat.

Cook the chicken

In another medium-sized sauté pan, coat bottom with olive oil.  Add diced onion, carrot, celery and garlic (soffritto). Allow to brown for a few moments. Add your choice of aromatic herbs (Chef Michele recommends sage, bay leaves, and rosemary), and browned chicken pieces. Adjust to taste with salt, add white wine and allow to evaporate.  

Add tinned tomatoes and allow to simmer for 25-30 minutes.  

When sauce is complete and done, place into individual serving dishes and serve promptly.
