Being able to enjoy a luscious, tempting chocolate cake should be within everyone's grasp, and with the increased popularity of recipes working around dietary needs, classic dishes that once were out of reach for some are now the provence for all.  Thank goodness!

While there are no specialty ingredients used in this dessert recipe, and the cake is made in fact without flour, this is still a special-occasion kind of dessert (that you can have every day!), thanks to the richness of the dark chocolate, perfectly balanced by the tartness of the crowning ingredient, traditional Balsamic vinegar.

  • Egg 5
  • Sugar (Granulated) 50 grams
  • Dark chocolate 200 grams
  • Butter 125 grams
  • Raspberries 20

Prepare and bake the Gluten-free dark chocolate cake base

Preheat oven to 90C. Line baking pan with parchment paper.

In large mixing bowl, beat eggs and sugar.

In another bowl, dice chocolate and butter. Melt both ingredients together in double boiler, and when both are fully melted, remove from double boiler. Stir well, and slowly add to sugar and egg mixture. Using heavy whisk, blend well and place mixture into prepared baking pan. Place into preheated oven and bake 1 hour.

Once done, remove from oven and allow to cool in baking pan.

Finish the cake preparation

Using either rounded or square cookie cutter (or any kitchen utensil with these shapes), cut cooled cake into selected shapes and place one portion in middle of individual serving plates.

Garnish cake with washed raspberries, and a few drops of Traditional Balsamic Vinegar, which will bring out the chocolate flavor of your dessert.

Loving the chocolate and berry combo

If there were more stars to give here, I'd do it without thinking twice. Loving, absolutely loving the strawberry topping on this cake - it cuts right into the depth of the chocolate and really lightens things up with the cake (which is delicious and super-rich). I have a major sweet tooth, and this recipe addresses that need so perfectly. I've made it several times as it comes together really quickly too - once I used an apple cider vinegar since I was out of the little bottle I had brought back with me from Florence, and it worked OK. Not my favorite version, but it gets the job done if you're hankering for a great chocolate based dessert without too much toiling around in the kitchen.
