  • Chicken 600 grams
  • Water 200 grams
  • Salt 20 grams
  • Sugar (Granulated) 20 grams
  • Extra-virgin olive oil as needed
  • Pumpkin 800 grams

Prepare Chicken Breasts

In a bowl, melt sugar and salt in the water and put chicken breast inside, cut in slices, around 1 cm thick.

Leave in fridge for 1 hour. —- you can add garlic, orange peel, lemon pepper and your favourites herbs, whatever you like! 


This will keep your chicken breast juicy and tender.

Prepare the Pumpkin

Pre-heat oven at 350F.

Peel the pumpkin, cut it in slices, 2 cm wide and season with evo oil, salty and pepper to taste.

Bake the pumpkin in casserole in the oven for 25-30 minutes.
When the pumpkin in ready, dry the chicken with paper and massage it on a plate with evo oil (no salt)

Cook the Chicken

Bake the pumpkin in casserole in the oven for 25-30 minutes.

When the pumpkin in ready, dry the chicken with paper and massage it on a plate with evo oil (no salt)

Heat a non-stick pan with some evo oil at medium temperature, add chicken.

After 2 minutes, turn over and repeat

Season to taste and serve with the roasted pumpkin!
