Dessert might not always be at the fore-front of your menu planning for every day, but it's undeniable:  a sweet recipe at the end of any meal no matter how big or small, is a terrific way to end a shared meal together.

While you might be wanting to cut back on the sweets as we head into the major Sweets time of year around the holidays, a terrific fruit-based dessert recipe light on sugar and ingredient lists might be just the thing to sway you in the direction of dessert.  Want to test it out with other seasonal fruit beyond pears?  Let us know if you test out another fall favorite:  apples.  Try increasing poaching time for fruit just a bit to make sure your apple dice comes out soft and tender.

Ingredients

for 2 servings

Lemon-Poached Pears with Cinnamon and Almonds ingredients

  • Pear 2 (Medium, firm)
  • Sugar (Granulated) 200 grams
  • Lemon Zest 1 (Juice reserved)
  • Cinnamon Stick 1
  • Water 500 ml2
  • Almonds as needed (Flakes)

Prepare Pears and poaching syrup

Peel pears, set aside and cover to prevent browning while syrup is cooking.

In medium-sized sauce pot, add water and sugar.  Bring to boil, and add cinnamon stick and freshly grated lemon zest.

Poach Pears in Cinnamon poaching syrup

When the sugar has dissolved in cinnamon poaching syrup, remove wrapping from peeled pears.

Reduce the heat to low, and gently lower the peeled pears into the syrup using slotted spoon. 

Simmer gently until pears are tender to touch with fork.  Remove the pears and let them cool on a plate.

Reduce Cinnamon poaching syrup and finish dish

Add reserved lemon juice to the poaching syrup.  Simmer gently over low heat until syrup is reduced to half or less of original amount.  When slightly cooled, use medium-sized sieve to filter out spices and other solids from your poaching syrup.

Place poached pears onto individual serving dishes.  Drizzle with filtered poaching liquid and garnish with almond flakes to your liking.  Serve at room temperature.

I love using the best of what the seasons provide, so poaching pears is a quick and simple way to get something sweet together for any lunch or dinner. Fruit-based recipes are a favorite, so I'm delighted to include this one into my recipe books.
