Orange juice is a tasty, refreshing flavor especially when included in select desserts. Imagine an even sweeter citrus, and you'll get lovely mandarin juice. Combined with fluffy whipped dream, and this mandarin-flavored dessert becomes an invigorating dream of a dessert. We've got a sweet-tooth to be sure, but with the fruit essences, we feel a little less guilty about indulging in dessert with this one. This quick dessert is easy to pull together, just be sure to give yourself enough time before serving to let your parfait set in the fridge.

Even though the steps are few, and the ingredients are limited, it's a dessert that packs a punch. Mandarin orange juice goes a long way, and we're so glad for that. A great dessert recipe for company and casual nights, Mandarin Parfait is a good ally to have in your dessert recipe chest. We've had success making the citrus dessert both in the summertime and chillier months, when mandarins are in season here in Italy, coming up from Sicily.   • Mandarin Juice 400 grams
  • Eggs (Yolk Only) 2
  • Milk 100 grams
  • Sugar (Granulated) 3 table-spoon
  • Gelatin (Sheets) 13 grams
  • Whipping Cream 125 grams

Prepare the base for Mandarin Parfait

Pass the freshly-squeezed mandarin juice through a sieve to remove the citrus bits and seeds.  Soften the gelatin in a small bowl of cold water.  Remove gelatin and squeeze to reduce excess liquid.  In a small sauce pot, gently heat milk until warmed (but not scalding or boiling).  Place the gelatin and allow to dissolve.

In a separate mixing bowl, combine the egg yolks and the sugar.  Once they have been well-mixed, add the heated milk.  Once blended, add the mandarin juice.   Blend well, cover with plastic wrap.

Prepare the Parfait

In the meantime, whip the heavy cream until cream holds stiff peaks.  Remove from refrigerator - the consistency should be like a thick cream.   Fold in the whipped cream gently to incorporate air into the mixture.  Fold cream into the mandarin cream blend moving in a bottom-to-top motion.   

You can fill either one single parfait mold, or individual molds.  Once filled, place in refrigerator again, and allow to cool and solidify to the correct consistency.

Complete dish and serve

To remove from the molds when ready to serve, immerge the mold into a container of hot water (only the lower part of the mold) and flip over onto serving plate.  You can help the parfait detach from the mold by running a butter knife (or a knife with a rounded edge/tip) inside the edge of the dessert and the mold walls.

You can serve with any desired garnish, from a fresh citrus coulis to a dusting of crushed cashews - or a completely different accompaniment - whatever your personal preference.

I trust Mamablip's recipes so much, I had to try this one, despite mandarines not being my go-to fruit. Of course I was not disappointed, as this dessert not only was super-easy to make, but absolutely delicious!
