And when you're hungry, little fuss is just what you need. With this quick Rosticciana recipe, the perfect meat to use are pork ribs (have your butcher chop them down to size for you, or pick up pre-cut ribs from the meat section of your grocery store) that have an fine ratio of meat and fat on the bone.

This allows for the rosemary and other aromatic herbs you select to blend and envelope the dish as its cooking.

Oven-baked Rosticciana Ingredients

  • Pork-Ribs 500 grams
  • Extra-virgin olive oil as needed
  • Garlic Cloves 5
  • Salt and Pepper as needed
  • Rosemary (Branch) as needed
  • White wine 0.5 cup

Preparation

Prepare the Rosticciana

Preheat your oven to 450F.  Cover pork ribs in light coating of salt, and then pepper.  

Coat bottom of medium sauté pan with extra virgin olive oil, and heat.  When oil is heated through (but not smoking), add pieces of pork and the rosemary, and allow meat to brown evenly. 

Once browned, add white wine and allow to evaporate, about 3 minutes.  Remove from heat.

Cook the Rosticciana

Prepare a roasting pan with a drizzle of olive oil, and several garlic cloves. 

Mix well to allow the garlic aromas to mingle well with the oil.   Add pork tips along with the herbs, and cook in the preheated over for approximately 25 minutes. 

Check cooking progress when time is halfway over, and turn over the pieces of pork to allow for even roasting.

Complete the Dish

Once meat has cooked through, turn on the broiler function in your oven, move the inner rack to the upper third of the oven, and allow meat to broil for a few minutes to create an even crust on the meat.  Remove from oven, and allow to cool slightly.

Adjust the pork for salt, and serve warm.

Ribs in the oven? What?

I had no idea you could do ribs in the oven - I've only had them BBQed and I think I was only living half a gourmet life until now. Not only is this version easy to handle, I love how little prep work is involved. It's fantastic and I honestly can see myself making this version more than just once.
