  • All-purpose flour 0.5 cup
  • Whole What Flour 0.3 cup
  • Butter 0.2 cup
  • Extra-virgin olive oil 2 table-spoon
  • Green Olives 0.3 cup
  • Salt and Pepper as needed

Prepare the Cracker Dough

Using large holes on cheese grater, shred the Pecorino cheese into mixing bowl.  Coarsely chop green olives, and mix in with cheese.

In bowl of stand mixer, place two flours, cold butter, and grated cheese mixture.  Add in a pinch of salt and pepper.   Blend on medium until mixture has reached desired consistency, and all ingredients are fully incorporated.  Remove from bowl, and shape into ball.

Bake Crackers

Preheat oven to 350F.

Generously dust cutting board or working surface with additional whole wheat flour.  Place ball of dough on top, and using well-floured rolling pin, roll dough out until approximately 1/4" thick.  Using your preferred cookie cutter shape, cut out cookies using all of the dough until completely used. Transfer cookies onto a baking tray lined with waxed paper. 

Place tray into preheated oven, and allow to cook for approximately 12 minutes, until cookies are lightly golden in color. Remove from oven, and allow to cool thoroughly before serving.

Cookies can be placed in airtight container and conserved for up to 1 week.

A perfect home-made snack for a glass of wine

I love boasting about having made my own crackers when friends come over for a glass of wine! I also recommend adding a little cumin or paprika to different batches for a special color effect!
