Pizza with Tomato and Grilled Eggplant

Eggplants and tomato sauce...what can go wrong?  Not much, especially if paired with lovely mozzarella and put on a home-made pizza!

Our pizza with grilled eggplant is a flavor-packed, quick and easy dinner idea: make the pizza dough in advance and this recipe will tajke less than 15 minutes!

Eggplant is one of our favorite vegetables to cook with, as they are in season for quite some time and go well with almost everything you can think of!

Fresh Pizza dough ingredients

  • All-purpose flour 200 grams
  • Salt 2 grams
  • Water 120 grams
  • Instant yeast 3 grams

Prepare the eggplant

Peel the eggplants and cut lengthwise into slices that are approximately 1/4" thick.  

Place your grill pan on medium-high heat.  When it's heated and is very hot, sprinkle the pan with sea salt and place the eggplant slices on top. 

As soon as the slices begin to turn darker on top (the color should be dark, almost blackened), turn the eggplant slices over and proceed on the other side. 

Each slice should need about 4 minutes per side.

Prepare the Pizza

Lay out your pizza dough on a circular baking dish (pizza tray) that has been abundantly floured on the bottom.

Spread out the tomato sauce (see the recipe for tomato sauce for pizzas) using a circular motion.

Place a few slices of mozzarella, squeezed from the excess water.  Place between 4-5 eggplant slices on top of the tomato sauce.

Bake the pizza

Add a splash of olive oil on top of the eggplant and place in preheated oven (between 400 and 450F) and cook for no longer than 10 minutes (check periodically on the bottom of the pizza to ensure proper cooking and color).
