Clean the shrimp by removing the shells, but leaving the heads and tails intact.
Remove the dark line on backs of shrimp using a wooden toothpick.

Remove the orange peel (either by simply peeling it, or by using a knife to cut away the peel and pith) and the white pith.
Cut into thick slices and place in a shallow serving dish (with 1" high sides to hold the marinade and fish).
Peel the ginger and leave it whole or cut it into slices, depending on your taste.
Place the orange slices, ginger and oregano leaves in the serving dish, and season with salt and olive oil to taste.
Mix well, add the prepared shrimp and let marinate at least 1 hour before cooking.

Preheat oven to 220C and cook shrimp for approximately 4-5 minutes, until cooked through and not opaque.
Remove shrimp from serving dish and place on top of a bed of rucola (rocket). Season once again with salt and a drizzle of olive oil.
