A genuine classic of traditional Italian cuisine, Spinach and Ricotta Gnudi is a simple first course dish to create, and a memorable tasting sensation for your loved ones lucky enough to enjoy this traditional Italian dish with you.

Using simple ingredients you might even already have on hand, an easy ricotta cheese and spinach dough will come together as fast as quicksilver in your kitchen, making Gnudi a recipe you can look to when you just don't know what to do about making lunch or dinner (or hey, breakfast if you like!).

A different take on the classic Italian spinach and ricotta blend, the Ricotta and Spinach Gnudi pasta dish is also a wonderful match with a fresh tomato sauce if you've got some time to pull together another genuine italian classic, or if you're in a rush, a simple dressing of melted butter and freshly grated black pepper is also a wonderful, quick sauce to enhance the terrific flavor duo of fresh ricotta and spinach.

Ingredients

for 2 servings

Gnudi Ingredients

  • Ricotta cheese (Sheep's Milk) 600 grams
  • Spinach 160 grams (Cooked weight)
  • Eggs (Yolk Only) 4
  • Nutmeg as needed
  • Parmesan cheese (Grated) 80 grams
  • Salt and Pepper as needed
  • All-purpose flour 1 cup (or rice flour)

Gnudi Sauce Ingredients

  • Lemon 1 (Organic)
  • Black Pepper as needed (Freshly ground)
  • Butter 30 grams (unsalted)
  • Parmesan cheese (Grated) as needed

Assemble the Gnudi

Drain the ricotta for 15 minutes (you can place the cheese into a pasta colander is you don't have a fine mesh strainer).

Blanch the spinach, and when cooked, drain very well, using hands to squeeze out excess liquid.  

Finely mince spinach, and place in mid-size mixing bowl.

Add other Gnudi ingredients to bowl with minced spinach.  Mix well to combine all ingredients.

Shape the Gnudi

Using your hands, shape spinach and ricotta blend into small balls, approximately 25/30 grams per piece.

Repeat this process with remaining dough.

When all dough has been shaped into Gnudi, place all the rolled shapes onto a plate.  Coat with all-purpose flour, let rest 2 minutes, and coat once again.

You can drizzle the Gnudi with flour or roll them in flour placed directly on a plate.

Cook and Complete Dish

Bring large soup pot of salted water to boil over medium-high heat.

Once water is boiling, add shaped Gnudi, and allow to cook until the Gnudi are not floating and are cooked through.  Cooking time should be approximately 3 minutes.

While Gnudi are cooking, melt butter in small sauce pan, set aside.  Wash and dry lemon, grate rind finely, set aside.

When Gnudi are cooked through, drain well, and place on to individual serving dishes.  Dress with melted butter, fresh grated Parmesan cheese, grated lemon rind, and freshly ground black pepper, to taste.

Serve promptly while Gnudi are still warm and aromatic.

Quick and easy - spinach gnudi rock!

I love gnudi, and making them with spinach gives a slightly health-focused kick I love. My family also goes bonkers for gnudi, and because they're so ridiculously easy to make, I love putting them on our table!
