  • 1 cup Arborio Rice
  • 2 cups chicken or vegetable broth
  • 1/4 cup grated Casera cheese
  • 2 tablespoons butter
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1/4 cup diced Prosciutto 'Petals'
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Berlucchi sparkling wine to serve


  1. In a large saucepan, heat the olive oil over medium heat. Add the onions and garlic, and cook until they are translucent.
  2. Add the Arborio rice to the pan and stir until the rice is well coated with the oil and starts to become translucent.
  3. Add 1 cup of the broth and stir. Keep adding the broth, 1/2 cup at a time, stirring constantly, until the rice is cooked through and creamy.
  4. Stir in the grated Casera cheese, butter, and cream, mixing until the cheese is melted and the risotto is creamy.
  5. Season with salt and pepper to taste.
  6. Serve the risotto in bowls and garnish with diced prosciutto petals and grated Parmesan cheese.
