Tortelli with Beef Ragout Sauce paired with Podere Le Ripi | 15 Minute Recipe

A great classic of Italian cuisine that we can never get enough of: tortelli ripieni e sugo di carne!

Today chef Sara Lai proposes a great classic: tortelli filled with potatoes and meat sauce!

If ever there was a list of quintessential Italian comfort food, this superb, classic pasta recipe would certainly be included in the list.  

Warm tomato sauce and rich ground beef envelop a fresh, handmade, silky smooth pasta filled with potatoes. 

Needless to say, it takes more than 15 minutes to make this excellent pasta dish, but in no time the chef will teach us the tricks needed to make it.

Tortelli with Beef Ragout Sauce

Ingredients for 4 servings:

- Potato Filling for Traditional Potato Tortelli
Yellow Potatoes 500 grams
Parmesan cheese (Grated) 100 grams

- Homemade Tortelli Dough for Traditional Potato Tortelli
Semola flour 400 grams
Egg (Medium Yellow) 4

- Beef Ragout Sauce for Traditional Potato Tortelli
Ground Beef 300 grams
Yellow Onion 1
Carrot 1
Celery (Stalk) 1
Red wine 200 ml2
Canned tomato 250 grams
Extra-virgin olive oil as needed
Rosemary (Branch) as needed
Thyme (Stalk) as needed
Sage (Leaves) as needed
Bay leaf as needed
