A perfect blend of ripe, juicy Anjou pears with aromatic toasty walnuts is perfectly suited to the creamy, milky flavors of Italian Pecorino cheese. This is a terrific salad recipe to make on the fly, if you're pressed for time and need to pull out the stops for an impressive starter. Buffed up with some generous wedges of focaccia bread, you can even turn the salad into a main dish for a light, refreshing meal!

Using ripe pears (red or green as per your preference), wash the pears, and cut in half.
Remove core, and slice into slices approximately .5cm thick. Place into a medium mixing bowl, and delicately season with the lemon juice, olive oil, salt and pepper to taste. Set aside.

Cut the Pecorino cheese into cubes, and add to the bowl with the dressed pears. Toast the walnut pieces over a low flame, in a heavy-bottomed sauté pan. Be careful not the burn the walnuts - allow to begin to darken, and immediately remove from heat. Allow to cool for a few moments. When cooled, add to the pears and cheese, and toss well to combine all the ingredients. If desired, season with aged Balsamic vinegar.
Serve room temperature, with fresh bread if you wish.
