Light and colorful as spring: this unusual mix of seasonal fruits and vegetables is ideal for these first days of warm weather. Served as a appetizer or accompanied by delicate goat cheese or ricotta, this salad is irresistible!
This asparagus and strawberry salad is a really delicious side dish, beautiful to look at and delicious to eat. A few drops of balsamic vinegar complete this easy, amazingly tasty recipe.

The ingredients might seem weird, especially together, but trust us - the result is absolutely amazing!

for 4 servings
Clean the asparagus, and immerse in boiling water for max 2 minutes.
Put in a bowl with cold water and ice.
When chilled, dry asparagus and cut in pieces, keeping the ends, 'tips', intact.
Add fresh strawberries cut into cubes and the basil leaves, cut on torn in small pieces.
Season with evo oil, salt and pepper and serve the salad, placing the asparagus ends on top, for presentation.
Add some drops of balsamic vinegar and serve.
