Blend all pudding ingredients in small sauce pot and bring to boil over medium heat. You can substitute gelatin with agar agar if you prefer a vegan version.
Allow mixture to cool, and divide into small dessert cups or bowls to be used to serve pudding.
Cover with plastic wrap, and allow to cool in refrigerator at least 2 hours.

Using either cantelope, honeydew or any other firm-fleshed seasonal melon, cut melon away from rind, and cube into equal-sized cubes.
In medium mixing bowl, add powdered sugar and Vin Santo. Allow to marinate in refrigerator for least 1 hour, while pudding is setting.
Finely dice mint leaves, and add to melon shortly before serving.

Remove chilled pudding from refrigerator.
Garnish each pudding with heaping tablespoon of melon and mint, and serve cold.

I needed a quick dessert that I could prepare ahead of time, and this certainly delivered what I needed. Just a few minutes to whip up the pudding base and to macerate the fruit. Put it in the fridge and got everything else done while this was chilling - just what I needed and the best part was that everyone loved it! Surprisingly layered and textured taste considering the ingredients are easy to source and you actually likely already have most of them already at home!
