Spaghetti and clams are a combo made in heaven, and we all love them. This is one dish I know I'll never have leftovers, but it's worth every bite!
Quick and easy, a simple toss of the trusty sauté pan and you're halfway arrived to your classic Italian Spaghetti with Clam Sauce. Hard to believe something so delicious could be so easy, but it's true! If you don't happen to have a package of spaghetti in your pantry, you can use another long noodle, like Linguine or even Spaghettini or Angel Hair.
Terrific versatility and lightness make this dish a perfect companion to a bubbly Prosecco - that you can't NOT have in your pantry or wine storage! A short ingredient list make this a quick and easy classic Italian seafood first course, and you can add any other shellfish you might like to see featured - try adding in some mussels for extra saline and seaside sensations.
This perfect Italian clam sauce is even better when you make it pop with a bit of white wine in the cooking sauce. While our chef has developed an alcohol-free variation, feel free to add in a bit, about 1 cup, of white wine towards the end of your sauce making process to really enhance the balance and aromas of your quick Italian Clam pasta - make it today and enjoy! 2 hours before preparing Spaghetti, wash clams well under cold running water.
Fill large bowl with cold water. Add 3 full tablespoons table salt to bowl.
Add clams, allow to soak 2 hours to purge sand from clam shells.

Finely dice parsley and garlic cloves, set aside.
Drain clams well, place into large sauté pan, add 1 cup water and 2 full tablespoons of EVOO. Cover the pan, and turn heat to as high as possible until all clams have opened. Any unopened clam shells should be removed from pan and discarded.
Remove from heat, check pan bottom for additional sand. Should you see any sand, you will need to use a fine sieve to filter out the liquid and eliminate the sand.

In meantime, boil large pot of salted water, add spaghetti.
Allow to cook through, until you reach al dente consistency.
Drain pasta, add to sauté pan with clams and cooking juices.

When spaghetti is being tossed with clams and cooking liquids, add chopped parsley and garlic.
Place dressed spaghetti and clams into individual serving dishes. Drizzle with good EVOO and a sprinkling of freshly-ground black pepper, if desired.
Serve immediately.
