Sometimes we're guilty of leaving our steamed veggies as left-overs. While we love eating healthily and heartily, we can't always finish the mountains of seasonal vegetables we make. We're guilty of having eyes bigger than our stomachs too - it happens from time to time even for us!

If you've got veggie lovers in your house, they'll be all-on board for this delightful, light torte recipe.

If you want a lighter meal, make it your main course, or if you're looking to supplement a larger multi-course meal, use this Spinach Tortino recipe as your antipasto and watch it disappear from your serving plates.
Enjoy this light take on using up random seasonal vegetables sitting around your fridge, and you can thank us later for the great vegetable recipe!
