Sometimes we're guilty of leaving our steamed veggies as left-overs. While we love eating healthily and heartily, we can't always finish the mountains of seasonal vegetables we make. We're guilty of having eyes bigger than our stomachs too - it happens from time to time even for us!

For the spinach torte
Cut the spinach in small pieces with a knife (we prefer fresh spinach, but frozen is fine!).
With a blender, mix spinach with the rest of the ingredients.

Coat 4 muffin-size baking cups with butter and pour in mixture.
Bake at 350F for 30 minutes.
TIP: You can use any vegetable (carrots, squash, zucchini, cauliflower etc), and also ricotta cheese! Just make sure the vegetables are boiled and very well drained.

My favourite cheesy and smooth tortino at home! I absolutely love spinach, and even better if it comes as a warm smooth airy tortino mixed with amazing parmesan!
