In recent years, legumes have been entitled to enter the pantry of pastry lovers, especially those who are into vegan desserts.
The chocolate bean cake that we propose today is not vegan because it involves the use of eggs, but it is delicious, very similar to a brownie and above all very easy.
The result of just a few steps and very simple ingredients is really amazing: a really chocolaty chocolate cake, in which the beans replace the flour and help to give a melt-in-the-mouth texture to the cake.

Preheat the oven to 350 °F/175 °C
In a blender combine 1 egg with the beans - add some of the beans cooking water to blend if needed (not too much)!

Beat the other two eggs with the sugar, then add the other ingredients, except the dark chocolate.
Add the beans puree and mix very well taking care that it is free of any lumps.
Chop the dark chocolate and add the chocolate chunks to the batter.

Pour the batter into a parchment lined loaf pan. And yes, the batter is very liquid-y.
Bake the cake for approximately 35 min, and set a side to cool completely before removing it from the pan.
