Melt the almond paste with 150 ml of milk over a gentle heat until it is completely uniform.
Remove from the heat and add the gelatine sheets, previously tempered in cold water.

In a saucepan put 100 ml of milk with 5 gr of agar agar, mix with a whisk until you get a dense mixture, to be combined with hot milk and almond paste prepared previously.
Add the remaining milk and leave to cool until you obtain the consistency of a soft pudding.

Whip the cream until stiff.
Gently add the whipped cream to the mixture.
Place in a mold (individual or single, as you like. Store in the refrigerator)
Serve cold

Sometimes, you just need dessert - you just crave it. But since I'm trying really hard to limit my sugar intake, I'm always on the hunt for a dessert that I don't have to feel guilty about but that satisfies. Biancomangiare does all of that, and more. It reminds me vividly of being in Sicily, and what's not to love about that?
