Beef Gratin with Porcini Mushrooms and Piave Ingredients

  • Beef (Fillets) 4
  • Sage (Leaves) as needed
  • Rosemary (Branch) as needed
  • Leeks 1
  • Salt and Pepper as needed
  • Extra-virgin olive oil as needed
  • Porcini mushrooms 200 grams
  • Piave Dop Vecchio Cheese 200 grams
  • Butter 30 grams

Prepare the Beef Cutlets

Brown the beef fillets over high heat in a little olive oil, leaving them pink at the heart.

Season with salt, pepper and a mixture of sage and rosemary, finely chopped.

Stuff the Fillets

Line each fillet with a long leek leaf (and a slice of lard if you fancy!) to hold everything together.


Place in a buttered oven dish. Stuff the top with the trifoliated porcini mushrooms and cover with flakes of Piave DOP Vecchio DOP.

Complete the Dish

Ten minutes before your meal, place in the oven and bake at 180 °C until the cheese has melted and is crispy and brown.
