October is here, and although fall is definitely not everyone's favorite season, we have smiles on our faces because one of our most beloved vegetables is finally back in all its freshness: green beans (or string beans), have made their appearance again!
Pugliese-style green beans are a simple, healthy side dish from the Apulian culinary tradition.
It can be made in just a few steps and is ideal to accompany a second course of meat, fish, or can be used as a sauce for pasta.
The flavor of the dish is given by the accompaniment of peeled tomatoes seasoned with extra virgin olive oil, garlic, hot pepper and fresh parsley.
Pugliese style green beans can be served warm or cold and if prepared in advance they can be kept in the fridge for two days.

Boil a large pot of water and boil the green beans. You can keep boil them for as long as you desire, depending on how you like them: very soft or crunchier.

In a frying pan sauté a clove of garlic, oil and powdered or fresh chili pepper.
Add the canned tomatoes, parsley and salt to taste. Let it cook for about 10-15 minutes.

Drain the beans and add them to the skillet.
If needed, add a little salt and, if you like, a pinch of black pepper.
Let it cook for another 10 minutes over medium-low heat. Enjoy your meal!
