This classic Italian soup recipe has been made in the kitchens of countless Italian households across the land, providing a consistent, constant source of warmth and Italian culinary traditions for eons.
If the question on your tongue is what is Stracciatella, well, it's a rich vegetable or meat-based broth with little stracciatella, in Italian, rags, of eggs mixed with grated Parmesan cheese so they become thin dumplings in the soup broth.

In a pot put the vegetables to boil (don’t cut them) in 2,5 litres of water, to make the broth. Boil for at least 30 minutes. Salt and Pepper to taste.
When the broth is ready, strain it and use as you prefer.
The broth can be made with most vegetables, even some left-overs you have, or a good store-bought broth.
If you are not a vegetarian, you can also add chicken leftovers to the broth!
In a bowl, energetically whisk the eggs and the parmesan with plenty ground black pepper and salt to taste.
After the broth has boiled for at least 30 minutes, take out the vegetables and bring too boil again.
Pour egg mixture inside while continuing to stir the broth so the eggs become perfectly ‘stracciati’!
Stir for a minute, then serve hot.
