Summer is the season for making lots of lovely fresh food, and possibly without turning on the oven or the stove!
These coconut balls are quick to prepare, don't require any cooking time, are loved by all and perfect for aperitifs with friends on the terrace.
The sweet coconut balls have nothing to envy to the most complex cakes or cakes super-scenic: one pulls the other, and disappear in no time!
Ricotta cheese, sugar and coconut: 3 ingredients that in 20 minutes will turn into a perfect summer dessert. Soft, fresh, tasty!

Sift the ricotta cheese inside a bowl to make it creamier, add the powdered sugar, and mix everything with a spatula until you reach a smooth and creamy consistency
Once you have a smooth mixture, add 250 g of coconut and mix again, until it is uniformly incorporated.
At this point, use a spoon to scoop out about 20 g of the mixture.
Transfer the 20 grams of mixture to the palm of your hand and work it into a ball.
Place the ball in a small bowl where you will have placed in the remaining 50 grams of coconut flakes for the final garnish and move it gently to cover the entire surface.
As you make them, transfer the coconut balls to a tray. With these doses you will get 35 balls of 20 g each.
You can transfer them to the refrigerator for about 10 minutes before serving so that they compact slightly and most importantly gain freshness.
