In a large bowl, beat egg yolks with sugar until foamy; add butter and beat until thoroughly mixed.
Add sifted cocoa powder and roughly crumbled cookies: mix well with a spoon - (At this point, you can add a touch of liquor if you like).
When the mixture holds together put it on a piece of greaseproof paper and with your hands roll it inside the paper in a salami shape.
Pack tightly into paper and refrigerate for a few hours.
Slice as you would a salami and serve.
