You can ask the fishmonger to clean the sardines for you, but if you buy them whole, cleaning them is very easy.
First of all, cut the head off the sardines. Cut the belly lengthwise and remove the entrails.
We recommend doing this under running water. Rinse the sardines well before proceeding.

Finely chop the bunch of parsley and garlic clove. You can use a chopper if you prefer.
Add the olive oil, the lemon juice and salt and pepper to taste.
Put the sardines in a small baking tray without piling them on top of eachother (you can alternate head and tail to fit more in the tray).
Cover with the marinade.

Bake the sardines in a hot oven at 180°. Cooking time depends on the size of the sardines, but they still have a short cooking time of about 15-20 minutes.
After baking, your sardines will be soft and juicy, perfect to accompany some lovely toasted bread.
