Never thought I'd be a fan of sausage and onions, but after this, I am definitely a believer. I'll have one of these in the freezer at all times!
There's no competition with the take-out version of this pizza: your ability to select how much of each topping you prefer will make this a personal favorite. You can select either spicy or sweet Italian sausage, add different vegetables for added nutritious value and taste, or stick to the classic recipe for an authentic taste experience.

Heat oven to 190C. Place uncooked pizza dough, already shaped, (1 full batch Fresh Pizza Dough recipe) onto prepped baking sheet or pizza stone. Cook until lightly browned, remove from heat.

Dress precooked pizza base with tomato purée, adjust to taste with salt. Add diced mozzarella cheese.
Peel onion and thinly slice. Set aside.
Remove casing from sausages and discard. Using your hands, break meat down into smaller pieces and distribute on top of pizza base. Do the same with the sliced onion.

Bake pizza in preheated oven to done. Edges of your pizza should be crispy, and the cheese should be nicely melted.
Remove pizza from heat, and cut into slices. Garnish with a drizzle of olive oil, and serve hot.
