Creamy Pumpkin Risotto

The dish which most represents the season of falling leaves, naked trees and colorful rainy days!

It's November, Halloween is over and every self-respecting home has at least a couple of huge pumpkins to dispose of, certainly not a difficult job given the amount of dishes that can be made with this exceptional seasonal vegetable.

Colorful, sweet and at the same time earthy, perfect as a side dish, grilled accompanied by an excellent caramelized goat cheese, or in a first course, pumpkin never disappoints.

Today we are making risotto, a delicious seasonal dish typical, above all, of Sicily, easy to make and which will give you an easy first approach to pumpkin even if you are not an expert on it.

Don't be shy: have fun adding other ingredients you love to your pumpkin risotto: whether it be a little crispy bacon for flavor, a pinch of saffron for color and bitterness, or simply some spicy oil for contrast, your imagination will reward you!

Pumpkin Risotto Ingredients

  • Carnaroli Rice (for Risotto) 380 grams
  • Pumpkin 800 grams
  • Onion 1
  • Vegetable Broth 1 liter
  • Butter 40 grams
  • Parmesan cheese (Grated) 50 grams
  • Salt and Pepper as needed
  • White wine 2 cup

Prepare the Pumpkin

The broth should already be boiling on the stove.

Coarsely chop the onion and put it in a pan to sauté with a drizzle of oil.

Peel and cut the pumpkin into medium-large pieces. Add it to the onion and cover with two or three ladles of vegetable broth, so as to cover it completely.

Cover with the lid until cooked through.

Prepare the Rice for Risotto

In a nonstick skillet, toast the rice for 3-4 minutes in a drizzle of oil until shiny.

Raise the heat and deglaze with the white wine, let it evaporate.

Cook the risotto

When the pumpkin is so soft that it breaks up when you turn it with a spoon, add the rice to the pumpkin and cover with abundant vegetable broth, add salt and let it cook slowly. 

When the broth has been absorbed, taste to understand the level of cooking and, if necessary, add more broth, until the risotto has reached the consistency you prefer.

Complete the dish and serve

When the risotto is cooked, turn off the heat, add a knob of butter and the grated Parmesan cheese.

Stir constantly for a couple of minutes and, if you like, add some black pepper. Grated nutmeg, chopped rosemary or some crispy bacon are also great finish touches!
