I love an Italian sausage, and always look for different ways to cook it. This rosemary-scented sausage is a favorite in my family
Rosemary sausages make a great and tasty meal, especially when accompanied by red or white wine.
Another great way to eat these sausages, which are crunchy outside and juicy inside, is to cut them in smaller pieces and serve the, as am appetiser or aperitif: they will be gone in no time!

Put a little oil and the crushed and peeled garlic in a small pan. Brown the garlic over medium heat, then add the sausages and a pinch of pepper.

When the sausages have browned, add the chopped rosemary and add the wine.
Let it evaporate on a high flame. When the cooking juices have dried, the sausage will begin to brown.

Don't over-cook the sausages it so they doesn't become dry.
The sausage will release a lot of fat, which you can scoop out with a spoon if you desire. Serve hot.
If you would like to serve this dish as an appetizer, chop the sausages in smaller pieces and serve with tooth-picks.
