Summertime is the season for zucchini - everyone fortunate enough to have a green thumb and garden space will find themselves wondering how to use up all those fabulous zucchini over-running their vegetable patches.
Here's the solution for you: delicious fresh pizza dough brushed with extra virgin olive oil and topped with milky fresh mozzarella, with a bright pop of orange from your zucchini blossoms and you've got an exciting new creation to tickle your taste buds and help control your zucchini stash.

Heat oven to 190C. Place uncooked pizza dough, already shaped (1 full batch of Fresh Pizza Dough), onto prepped baking sheet or pizza stone. Cook until lightly browned, remove from heat.

Wash and dry zucchini. Gently rinse zucchini flowers, dry and set aside. Cut into small cubes, place in small bowl. Dress with extra-virgin olive oil and salt, allow to marinate.
Dust the precooked pizza base with mozzarella cubes. Add the marinated zucchini, zucchini flowers and the chives (ideally use fresh chives, but if not available, you can substitute smaller amount of dried chives for fresh herbs) to the pizza base.

Bake in preheated oven to complete baking. Edges of your pizza should be crispy and the cheese should be nicely melted.
Remove from heat and cut into slices. Drizzle with a touch of olive oil, and serve hot.
