Have you heard of Crescenza? This cow's milk cheese is like a felicitous blend between cream cheese and fresh mozzarella - it could not be more delicious! While the Mamablip recipe does include the crispy addition of sweet Calabrian Tropea onions, you can select to omit this ingredient if raw onions aren't your jam.

However, by following the recipe steps and soaking your thinly-sliced red onion, the Tropea onion becomes easy to digest, and much smoother and rounder in flavor sensation. What makes this tomato and cheese salad even more of a stand-out flavor?

Tomatoes, Onions, Cherries and Crescenza Ingredients

  • Crescenza Cheese 250 grams
  • Tropea Onion 0.5
  • Apple Cider vinegar 0.5 cup
  • Cherry Tomato 8
  • Cherries as needed
  • Extra-virgin olive oil as needed

Prepare the Onions

Slice the red onion into the thinnest slices possible, and place in a bow of cold water and vinegar for  approximately 1 hour.

Prepare the vegetables

When the onions have soaked for 1 hour, wash and dry the tomatoes. Cut into quarters, and dress with  olive oil and salt. 

Wash and dry the cherries. Halve, remove the inside pit. Add to tomatoes, combine well. When onions are  done soaking, drain and squeeze out excess water (tip for this: place onions into clean kitchen cloth, and squeeze out the excess

Finish the Dish

Slice the cheese into medium-thick slices (enough to hold their shape), place on individual dish.

Place a serving of the cherries  and tomatoes next the cheese slices. Top with the onions.

Drizzle olive oil on top, and sprinkle with salt and pepper to taste.  Serve at room temperature.
