Artichokes are a favorite springtime ingredient in classic Italian cuisine, and with good cause. Artichokes are much easier to clean than you think, and worth the extra effort once you enjoy these crisp, complex beauties. I'm lucky here to have select fruit and vegetable vendors who provide pre-cleaned artichokes, so check with your local farmer's market vendors and see if you can get them cleaned already if you're really put off by the preparation steps.
Rest assured though, once cleaned, this dish comes together in just minutes. With a small number of steps and some extra elbow grease, you'll be able to put a most rewarding springtime veggie recipe on the table for your loved ones - their joy will be a huge culinary reward for you!

Cut off the stems of the artichokes and remove the tough outer leaves. Trim the tips of the artichoke heads to the point where they begin to get whiter and tender.
Now cut the artichokes in half and remove the hairy inside part. Halve a lemon and rub the artichokes well with it, squeeze the rest in a bowl of cold water, and leave them to soak for at least 1 hour.
This serves two functions: it prevents the artichokes from turning black and gives them a lovely lemony scent.

Proceed by slicing the artichokes very finely and dressing them with the olive oil and salt. Once plated, cover the salad with shavings of Parmesan cheese. If you have one, use a truffle slicer to make these cheese slivers.
