In my continuing series of fried, scrumptious treats, I bring you another masterpiece: literally translating to mozzarella in carriages, this recipe's name harkens back to when bread used was round, and looked like wagon wheels - the cheese looked like it was squashed between two wagon wheels. And in keeping with the movement theme, these delectable treats will roll directly into your belly.
If you can get your hands on fresh buffalo-milk mozzarella, that's the best to use. Otherwise, classic Italian fresh mozzarella will work too. Your family is going to want to replace the classic grilled cheese lunch with a Mozzarella in Carrozza recipe meal!

Beat the egg with a pinch of salt and add a little milk until the color of the mixture is opalescent. Place a knob of butter and a tablespoon of extra-virgin olive oil in a non-stick pan.
Cut the slices of bread in half and when the butter has melted dip to moisten them in the egg mixture and fry them in the pan. They are ready when both sides are golden brown.

Preheat oven to 240C.
Place the slices in an oven-safe baking dish and cover each one with a slice of mozzarella cheese. Sprinkle with more salt and a dash of black pepper if you like. Cook in the oven until the mozzarella begins to melt.
Serve hot.
