Strawberry water cream! This strawberry mousse is a very simple, colorful and fragrant recipe that needs just a few ingredients for a really fantastic result.
It is a thick cream, with a fresh and light taste, that can be enjoyed by the spoonful, in a cup, or used as a filling for cakes.
For an extra velvety texture on the palate, you can filter the strawberry puree with a fine mesh strainer before adding it to the preparation.
You can also put it in the freezer and spoil it almost like a slushie: the versatility of this recipe makes it even more special!

Wash the strawberries and dry them with paper towels. Then deprive them of the stalk and cut them into pieces collecting them in a bowl or the container of a kitchen mixer.

In a thick-bottomed saucepan, collect the starch and sugar. Add the grated lemon peel and pour in the water, stirring with a whisk to avoid lumps.
Set over low heat to thicken while stirring.
Add the strawberry puree and continue stirring over low heat until the cream begins to thicken and leaves a veil/light coating on the whisk.

Turn off the heat and add the butter. Stir and transfer to a clean plate. Cover and let cool completely before using.
