While everyone certainly has their own idea of what makes this dish perfection, and how and what to include in order to create this ultimate comfort food, our version is poised to become one of your favorite mashed potato recipes. The exclusion of the traditional heavy-hitters like butter and sour cream make this a lighter, healthier Mediterranean, but once you try it, you might never look back!

Fill large soup pot with water and add salt. Add potatoes, and bring to boil. Cook until potatoes are softened and cooked through. Remove from heat, drain potatoes and allow cool slightly.
Once potatoes have cooled enough to handle, remove peel. Pass potatoes through a food mill, or using a potato masher, mash to desired consistency. If potatoes seem overly dry, use vegetable broth to assist with the texture of the dish.
In order to reach perfectly smooth consistency, use an immersion blender or food processor to remove all potato lumps you might miss with masher or food mill.

Add olive oil to mashed potatoes and adjust salt to taste.
Blend well and thoroughly.
Serve dish hot as a side dish, or an appetizer.

One of my all-time favs!
I will never get enough of potatoes in just about any form, but make 'em mashed, and this gal just can't get her fill. Perfect for a lighter side on Thanksgiving (for instance), or to go with a quick grilled chicken, the lighter texture and calorie count make me feel like I'm eating healthy here!
