All you need for this simple appetiser recipe (which can be a main dish if you like - just make more and enjoy it with some crackers or bread on the side), is some fresh prawns, some lovely seasoning and a good shave of Piave DOP cheese Mezzano.
This recipe is light, refreshing and perfect for these hot summer days! You can add lemon, some basil or mint leaves if you like, to make this dish even more interesting.

Clean the red shrimp by removing the head, the carapace and keeping the tail useful only for an aesthetic presentation of the dish.
Cut Piave DOP Mezzano cheese into very thin slivers, dress the shrimp with a drizzle of extra virgin olive oil and a few flakes of salt.
Arrange the shrimp and Piave DOP flakes on a plate and garnish with a few drops of Traditional Balsamic Vinegar of Modena.
