Bring a pot of salted water to boil.
In the meanwhile, grate the cheeses in a bowl. Add the evo oil and a little salt to taste.

When the water in the pot is boiling, put in the dry spaghetti and stir frequently.
A couple of minutes before cooking time (see on spaghetti package), keep half a glass of pasta cooking water, then drain the spaghetti.
Pour the cheese mix and the cooked spaghetti in a saucepan and stir constantly.
If the pasta sauce is too thick, add some cooking water.

When the spaghetti are almost cooked and creamy, add freshly grated black pepper to the saucepan and mix.
Serve hot, grate extra Piave cheese on top if desired...it's never too much!
