The birth of stracciatella ice cream dates back to 1961 and seems to have been made by Enrico Panattoni: in fact, he makes a particular ice cream, a very white cream with irregular pieces of dark chocolate inside.
During the whisking process he inserts a dose of dark chocolate, which, thanks to the beating of the paddles, "tears" the chocolate as it solidifies. The effect recalls one of his restaurant's most popular dishes, namely stracciatella alla romana.

In a pot, heat up the milk, the cream and the sugar and take off heat just before boiling point, then let cool down. Put in ice-cream maker and let mix for around 35 minutes, then add finely chopped chocolate and let mix for 5 more minutes.
Serve on crumble or red fruit sauce
