Toasted bread with grilled radicchio and mozzarella ingredients

  • Tuscan Bread (Slices) 1
  • Radicchio (Heads) 2
  • Mozzarella cheese 1
  • Extra-virgin olive oil as needed
  • Salt as needed
  • Black Pepper as needed
  • Balsamic vinegar as needed

Preparation

for 4 servings

Prepare the ingredients

Cut radicchio lengthwise in 4 pieces (or more if large) and baste it with oil; grill it for a few minutes and season with salt and pepper and few drops of balsamic vinegar. 

Slice mozzarella, squeeze it and drain it in a colander (if using scamorza you can avoid this step). Slice bread and roast it into the oven or onto the grill; cover with the grilled radicchio and top with mozzarella.

Bake and finish the dish

Bake bread slices for a few minutes to melt mozzarella, sprinkle with freshly ground black pepper and serve immediately

Easy, crunchy, juicy and versatile !

I made this recipe for my family once and it was absolutely amazing! Next time I thought my pantry was almost empty, I remembered this and substituted mozzarella with scamorza and used the vegetables I had left in the fridge. To this day, I am proud of the result!
