For breakfast, lunch or dinner: avocado toast is undoubtedly one of the trendiest dishes at the moment, and there are good reasons why it has become so popular!
Avocados have many great nutritional properites: it contains lots of greatof unsaturated fats and Omega-3, folic acid, potassium and antioxidants, which is why it has become very popular especially among athletes.
Today we are making a wonderful avocado toast with soft-boiled egg, with a yolk ready to be broken and eaten quickly: eggs and avocado are amazing together!
In addition to eggs, avocado toast can be enriched with smoked salmon, cherry tomatoes, ricotta cheese, and much more!

Toast two slices of bread, possibly brown bread, in the oven or in a frying pan. Once toasted, brush them with extra virgin olive oil and a pinch of salt.
Cut the avocado in half and remove the central stone. Since it oxidizes easily, remember not to open it long before eating it.
With the help of a spoon, scoop out the soft pulp and transfer it to a bowl. Season it with lemon juice, salt and pepper and mash it with a fork, until the pulp becomes creamy.
Boil a pot of water and boil eggs for 7 minutes. When ready, carefully peel the egg without breaking it
Once the eggs are peeled, take a plate and arrange the slices of bread on it, spread some of the avocado cream that you have previously prepared and seasoned.
Finally arrange the eggs on top.
If you like, you can further enrich the dish with chia seeds, pumpkin seeds or toasted pine nuts.
