Zucchini stuffed with sausage and mozzarella are a simple, tasty and nutritious dish, ideal as an appetizer or as a main course.

In summer you know, there are extraordinary vegetables and so why not take advantage to make stuffed zucchini? This are a very tasty recipe, and a great help for when you don't have much time to spend in the kitchen.

Stuffed Zucchini with Sausage and Mozzarella Ingredients

  • Zucchini 4
  • Extra-virgin olive oil 2 table-spoon
  • Sausages 4 cup
  • Breadcrumbs 0.5 cup
  • Mozzarella cheese 1 cup
  • Garlic Cloves 2
  • Basil (Leaves) 15

Preparation

for 4 servings

Prepare the Zucchini

Cut zucchini in half lengthwise. 

Preheat oven to 350 degrees F.

Score zucchini (like you’re dicing an avocado) and scoop out inside pulp into a large bowl.

Cook the sausage

In a large pan, add oil and put on stove on medium heat.

Take sausages out of skin and cook the meat, shredding with a wooden spoon.

Prepare the filling

Transfer the cooked sausage to the large bowl with zucchini pulp and add breadcrumbs, 1/2 cup mozzarella, minced garlic, and basil.

Fill and bake zucchini

Spoon mixture into zucchini and top with remaining 1/4 cup mozzarella.

Bake until zucchini is tender and cheese golden, 15 minutes.
