These delicious cheese dumplings are a variation of the typical specialty of German and Austrian popular cuisine, widespread throughout the Italian Tyrol.
Canederli conquer the palate from the first taste, thanks to the goodness of their rustic taste. A tasty dish, consisting of simple ingredients and rich in flavor, such as dry bread, fresh milk, butter and the amazing Piave mountain cheese. 

Ingredients

for 4 servings

Dumplings with Sausage and Piave Cheese Ingredients

  • Milk 250 grams
  • Stale Bread 300 grams
  • Egg 100 grams
  • Piave DOP Cheese (All ages) 400 grams
  • Sausages 250 grams
  • All-purpose flour 3 table-spoon
  • Breadcrumbs as needed
  • Salt and Pepper as needed
  • Piave DOP Cheese (All ages) as needed
  • Sage (Leaves) 4

Prepare the Dumpling Dough

Skin, crumble and cook the sausage until brown, set aside on a sheet of absorbent kitchen paper.

Cut the bread into small pieces and soak it in milk.

Once soaked, squeeze it and add the grated Piave DOP, the sausage, the eggs, salt and pepper and mix well.

If they are too soft, add a little breadcrumbs.

Prepare the Sauce

Melt the butter with the sage over low heat until it becomes hazelnut color.

Make the Dumplings

Boil a pot of salted water.

With the dough, form balls not too big, about 4 cm in diameter.

Flour them and then cook them in the boiling water. 

Like gnocchi, canederli will be ready when they come to the surface.

Complete the Dish

Place the dumplings on individual plates and cover with some of the melted butter and a generous grating of Piave cheese.

Chef's tip: Canederli can also be cooked and served in meat broth.
