Eggplant and Piave DOP Mezzano Flan Ingredients

  • Eggplant 2
  • Seed oil as needed
  • All-purpose flour 100 grams
  • Salt and Pepper as needed
  • Piave Mezzano Cheese 200 grams

Prepare the Flan

Wash the eggplants well, cut them into very thin and regular slices, dip them in flour and fry them in plenty of boiling oil.
Drain them and put them to dry on absorbent paper. Dice the Piave DOP Mezzano cheese.
Line the moulds with the eggplants, add the cheese and close the flan, finishing with another slice of eggplant.
Bake in the preheated oven at 180 °C for 15 minutes. Serve on a plate with a little tomato sauce and the eggplant flan.

Cheese is without a doubt one of my absolute favorite things in the world! To avoid eating chunks of it straight out of the fridge, I have always looked for recipes to incorporate my daily fix of dairy, and this eggplant flan is just what I needed!
