Eggplants are my favorite vegetable, and I had ran out of new recipes before finding this one - which is absolutely amazing.
If you're looking for a unique and delicious appetizer to serve at your next gathering, look no further than this Piave and Eggplant Mousse recipe. Piave is a traditional Italian DOP cheese from the Piave valley in Veneto, known for its nutty and slightly tangy flavor. When paired with the creamy texture and mild flavor of eggplant, it creates a harmonious and delicious mousse.
This recipe is easy to make and can be prepared in advance, making it the perfect dish for entertaining. To start, sauté the eggplant in olive oil until it becomes soft and tender. Then, blend the eggplant with Piave cheese, garlic, and heavy cream until smooth. Finally, fold in chopped parsley for added flavor and color.
Serve the mousse chilled, with crackers or crostini for a perfect appetizer. It's also delicious served with a glass of chilled white wine, such as a Garda DOC, to complement the flavors of the mousse. Your guests will be impressed by the unique and delicious combination of Piave cheese and eggplant in this mousse.
This recipe is also versatile and you can replace the eggplant with other seasonal vegetables, like zucchini, or add some herbs like basil or thyme to give a different touch to the dish
