An omelette, Frittata in Italian, is undoubtedly a simple dish, perhaps one of the first you learn to make in the kitchen.
What makes the difference between an ordinary omelette and a really good one, are definitely the ingredients!

Wash the wild hops and cut off the ends by a few millimeters, then boil for a few minutes in a small pot of boiling water until soft.

In a bowl pour the eggs, boiled hops, previously grated cheese and adjust salt and pepper to taste.

Place a tablespoon of olive oil in the bottom of a nonstick pan. This is not strictly necessary, but it to creates a nice crust on the frittata.
Pour the egg and hop mixture into the pan. Cook for about 5 minutes on low heat, turn the frittata and cook for another 5 minutes. If you like the crust on the outside of the frittata, turn up the heat for a minute before flipping or serving.
Serve warm.
