There's nothing to not like about this dish:  representing another terrific fried dish (not too much, folks, but every once a while, fried foods help make life just a bit sweeter) and an inventive way to use all of the zucchini, from blossom to vegetable.  

For those who believe anything can be good fried, this recipe proves that theory to be true.  While I love zucchini blossoms diced on the top of a fresh pizza, or adorning a creamy risotto, a fried zucchini blossom is the epitome of culinary enjoyment.  Has your family tried this exquisite classic Tuscan recipe yet?

  • Zucchini blossoms 8
  • Seed oil as needed
  • All-purpose flour 120 grams
  • Garlic Cloves 1
  • Lemon 1
  • Extra-virgin olive oil as needed
  • Salt as needed

Preparation

Prepare the frying pan and blossom batter

Place the extra-virgin olive oil in a skillet and heat over medium heat (enough oil to fry blossoms in, likely about 2.5 inches inside sauce pan).

Prepare a fairly liquid batter with flour and water, set aside.

Prepare the dipping sauce

Peel and finely mince garlic, set aside.

Measure enough olive oil to emulsify dipping sauce with lemon juice and garlic - you can adjust this amount as you prepare the sauce.

Combine the olive oil, garlic and lemon juice into a dipping sauce. Season with salt as necessary.

Fry the blossoms and finish dish

Pass the zucchini flowers in the batter and then directly to the frying pan after having dripped off any excess batter. Drop into the hot oil and cook until crispy, between 1.5-2 minutes.  Remove with a slotted spoon and drain on paper towels.  Adjust to taste with salt, to your liking.

Serve hot. You can experiment a variant by filling the zucchini with mozzarella cheese and anchovies.
